Got my gay little hands on two real easy to make, cheap and delicious recipes so figured I’d share them!
one deciliter is around half a cup, here is a converter if neededLentil Stew with Sweet Potato & Basil
Ingredients:
• 1 can/pack crushed tomatoes (around 2 dl)
• 1 dl red lentils
(dry or precooked, if you use precooked you can use an entire pack of them, the one i used was 290g but there was room for some more)
• 5-6 dl water
(if you use pre cooked lentils use only around 3 dl)
• ½ diced yellow onion
• 1 sweet potato
• 1 cube of vegetable stock
• ½ lemon alt. 2/3 of a lime
• salt, pepper, vegeab oil or butter and if possible fresh basilGet started:
Dice the onion and toss it all in a pot with some vegetable oil or butter, saute them until lightly golden (keep an eye on them it can burn easily if the heat is too high). Dice the sweet potato in to bite sized cubes. Pour in the tomatoes, water, vegetable stock and the basil in to the pot (be careful though if you used oil so it wont splash) and add the potato.Personally I’m a cayenne pepper junkie so I tossed some of that in there and a pinch of salt.
If you used dry lentils toss them in there at the same time, if not let it all boil on medium heat until the potato is soft and then add the precooked lentils and let it cook for max a minute more. Don’t want the potato to become mushy!
Don’t forget to stir it a little now and then! I also added a little bit of garlic powder because I’m a heathen child but a clove of fresh garlic will probably be delicious too, I followed a basic recipe that you can find
here (in Swedish) but more spices are more than welcomed tbh so go wild!Where I’m at this meal would be around 40-50:- ($5) and there will be enough for easily two or three meals.

Blue Cheese Broccoli & Green Kale with Rice
Ingredients:
• 2 medium sized broccoli heads
• 2-3 green kale leaves
• Around 70g blue cheese (if you’re in Sweden I will absolutely recommend Kvibilles Gräddädel, 140g and costs about 20:-)
• 1-3 (msk) spoons of creme fraiche (i usually use a vegan variant from Oatly because its cheap and tasty)
• salt, cayenne pepper, garlic powder, vegetable oilGet started:
This recipe was introduced by a pal and bless them I’ve been living on broccoli ever since more or less… Anyway!Boil the rice (I am the worst at this so literally do not trust me what so ever google a good tutorial or use a rice cooker bless bye).
Chop the broccoli florets and cut them in half and chop the kale rather roughly.
Boil some water and toss the broccoli in there and let it sit for about 3-4 minutes, personally I like when its not super cooked through, and I think it will get rather mushy if you cook it for too long so save some of that sweet sweet crisp my dude.
When you turn take the broccoli of the heat toss in the kale and let it steam for just a minute before draining it. Toss it all in a pan and fry it until a bit golden here and there for a couple of minutes with some vegetable oil and whatever spices you prefer really, this has literally been a “what do I have at home” sort of recipe so there’s always room for some Science™.When that’s done and did put it all back in to the pot once more and crumble the cheese in there and add the creme fraiche too. Gently turn the mix until the cheese has melted and without totally mushing the vegetables up. Turn off the heat and serve with the rice that you hopefully didnt brun or overcook!
Where I’m at this meal would be about 70:- ($7-8) and there will definitely be enough for two or three meals. You can absolutely skin the kale and if you want to use any other cheese I guess it’s all up to you to experiment around!
If you eat meat there are absolutely ways if adding it and if you wish to make it all vegan go wild!
